The author has, in fact, limited his research to a small number of fruits and vegetables: peaches, apples, cauliflower, tomatoes, and onions. He has endeavored, however, first of all, to define the elements of an agricultural cost price; then he undertook to collect, for each of the aforementioned products, operating accounts, which he has published, accompanied by some commentary.
